How to Cook Chicken Wings in Chinese Style

Cooking chicken wings in Chinese style is not only about achieving a delicious flavor but also about presenting a dish that is visually appealing and nutritious. This article will guide you through the entire process, from selecting the best ingredients to cooking and presenting your chicken wings with ease. By following these steps, you can create mouth-watering Chinese-style chicken wings at home.

Ingredients Preparation

To start with, you need to gather the necessary ingredients. The quality of these ingredients is crucial to the final taste of your dish.

Chicken Wings

Choose fresh chicken wings that are plump and have no unpleasant odors. Farm-fresh or high-quality supermarket wings are recommended. They should be free of bloodstains and have a fresh appearance. The texture should be firm and elastic, with a bright color.

Seasonings

Rice Wine (or Cooking Wine): 1 tablespoon for marinating and flavor enhancement.

Soy Sauce: 2 tablespoons (1 for marinating, 1 for stir-frying).

Oyster Sauce: 1 tablespoon for added flavor and depth.

Salt: To taste for seasoning.

Black Pepper: About 1-2 teaspoons for aroma and a slight kick.

Garlic Powder, Onion Powder, Chili Powder: Optional, up to 1 teaspoon each, to enhance aroma and taste.

Other Ingredients

Cornstarch: For marinating, to help the wings absorb flavors better.

Vegetable Oil: For frying and stir-frying.

Dry Red Chili Peppers and Sichuan Peppercorns: For adding heat and a unique aroma.

Green Onions: For garnish and added flavor.

Honey: Optional, for a sweet touch.

Breadcrumbs or Flour: For coating (if making crispy wings).

Preparation Steps

Step 1: Clean and Prepare Chicken Wings

Wash the Chicken Wings: Thoroughly clean the chicken wings under running water. Use a knife or kitchen scissors to remove any feathers and inner fat. This step ensures a tender texture and avoids any food safety issues.

Pat Dry: Use paper towels or a clean cloth to dry the wings. Removing excess moisture helps the seasonings stick better.

Step 2: Marinate the Chicken Wings

Prepare the Marinade: In a large bowl, mix 1 tablespoon of rice wine, 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, some cornstarch, and a pinch of salt. Stir until well combined.

Marinate: Add the cleaned chicken wings to the marinade, ensuring they are fully coated. Use your hands or a spoon to mix well. Cover and refrigerate for at least 30 minutes. For best results, marinate for 1-2 hours.

Step 3: Cook the Chicken Wings

There are various cooking methods for chicken wings, including frying, baking, and stir-frying. Here, we will cover both frying and baking methods.

Heat Oil: Pour enough vegetable oil into a pan and heat it to about 70% hot.

Fry the Wings: Remove the wings from the marinade and let the excess drip off. Fry them in batches over medium heat until golden brown on both sides. Ensure they are cooked through.

Set Aside: Drain the fried wings on paper towels to remove excess oil.

Preheat Oven: Preheat your oven to 180°C (350°F).

Prepare Wings: If you want crispy wings, coat them lightly with breadcrumbs or flour before baking.

Bake: Place the wings on a baking sheet lined with parchment paper. Bake for about 20-25 minutes, turning once halfway through to ensure even cooking.

Step 4: Add Flavor

Fry Aromatics: In a separate pan, add a small amount of oil and heat it. Add the dry red chili peppers and Sichuan peppercorns. Fry over low heat until fragrant. Be careful not to burn them.

Combine: Add the fried (or baked) wings to the pan with the aromatics. Stir in 1 tablespoon of soy sauce and mix well to coat the wings evenly.

Garnish: Add chopped green onions and toss to combine. If you like, sprinkle with sesame seeds or white sesame for added texture and flavor.

Tips for Perfect Chinese-Style Chicken Wings

Marination Time: The marination time should be neither too long nor too short. Too long can make the chicken too soft, affecting its texture.

Cooking Temperature: When frying or baking, control the temperature carefully. Too high can result in burnt wings, while too low may not give them the desired crispy texture.

Seasoning Balance: Adjust the seasoning according to your taste. Remember that soy sauce and oyster sauce are already salty, so add salt sparingly.

Even Cooking: Ensure the wings are cooked evenly, whether by turning them during frying or baking.

Aromatics: When frying the aromatics, use low heat to release their flavors fully without burning them.
