For 500 grams of flour, you’ll need approximately 200-250 milliliters of warm water.

In a large mixing bowl, combine the flour and salt. Gradually add the warm water, stirring with a chopstick or your hand until a rough dough forms.

Knead the Dough

Transfer the dough to a clean, flat surface. Use the heel of your hand to push, fold, and knead the dough for about 10-15 minutes until it becomes smooth and elastic.

Rest the Dough

Cover the dough with a damp cloth and let it rest for 30 minutes to 1 hour. This allows the gluten to relax, making the dough easier to roll out.

Divide the Dough

Once the dough has rested, divide it into smaller portions, about 100 grams each, for easier handling.

Prevent Sticking

Lightly dust your work surface with flour to prevent the dough from sticking.

Use a rolling pin to flatten each dough portion into a thin sheet, about 1-2 millimeters thick. Aim for uniformity to ensure even cooking.

Cut the Noodles

Fold the rolled-out dough sheet a few times and cut into strips of your desired width. Chow Mein noodles are typically thin but not as fine as vermicelli.

Cook the Noodles

Boil Water

Fill a large pot with plenty of water and bring it to a boil. Add a pinch of salt to the water.

Cook the Noodles

Add the cut noodles to the boiling water and cook for about 3-5 minutes, depending on the thickness and your preferred texture. Test a noodle to ensure it’s cooked to your liking.
