How to Cook Beef in Chinese Style

Cooking beef in Chinese style offers a diverse range of flavors and techniques that can transform a simple piece of meat into a culinary masterpiece. From stir-fries to braises, Chinese cooking methods bring out the best in beef, making it tender, juicy, and packed with flavor. Preparation Basics

Before diving into specific recipes, let’s cover some fundamental preparation steps:

Choosing the Right Cut

Flank Steak: Ideal for stir-fries due to its firm texture.

Brisket: Perfect for braises and slow-cooking because it becomes tender when cooked for an extended period.

Sirloin: Versatile and suitable for both stir-fries and grilled dishes.

Slicing Techniques

  • For stir-fries, slice the beef thinly against the grain to ensure tender bites.
  • For braises, larger chunks retain flavor and moisture better.

Marinating

Marinating beef with soy sauce, rice vinegar, sesame oil, ginger, and garlic enhances its flavor and tenderizes it. Marinate for at least 30 minutes, preferably longer for deeper flavor penetration.

Stir-Fried Beef with Vegetables

Stir-frying is a quick and healthy way to cook beef, preserving its tenderness and infusing it with vibrant flavors.

Ingredients

  • 200 grams flank steak, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium carrot, sliced into thin matchsticks
  • 1 medium onion, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

Marinate: In a bowl, combine the sliced beef with soy sauce, rice vinegar, sesame oil, cornstarch, garlic, and ginger. Mix well and let it marinate for 30 minutes.

Heat Oil: In a wok or large skillet, heat the vegetable oil over high heat until smoking.

Stir-Fry Vegetables: Add the bell peppers, carrot, and onion. Stir-fry for about 2-3 minutes until they are slightly tender but still crisp. Remove the vegetables from the wok and set them aside.

Cook Beef: Increase the heat to very high and add the marinated beef, stirring constantly to prevent sticking. Cook for about 2-3 minutes until the beef is browned and cooked through.

Combine: Return the vegetables to the wok and toss everything together until heated through. Season with salt and pepper to taste.

Serve: Garnish with chopped green onions and serve immediately with steamed rice.

Beef with Broccoli

This classic dish combines tender beef with crisp broccoli in a savory brown sauce.

  • 1 tablespoon cornstarch mixed with 2 tablespoons water

  • 500 grams brisket, cut into large chunks
  • 4 medium potatoes, peeled and quartered
  • 4 cloves garlic, crushed
  • 1-inch piece of ginger, sliced
  • 3-4 star anise
  • 2 cinnamon sticks
  • 3-4 whole cloves
  • 4 cups beef broth or water
  • 3 tablespoons soy sauce
