How to Cook Chicken Feet Soup Chinese Style

Chicken feet soup, also known as phoenix claw soup, is a traditional Chinese dish cherished for its rich collagen content and unique flavor. This soup is not only nutritious but also budget-friendly, as chicken feet are often sold at a low price compared to other meat parts. In this article, I will guide you through the step-by-step process of making authentic Chinese-style chicken feet soup.

Ingredients Preparation

Before we begin cooking, let’s list down the ingredients you’ll need:

  • 1½ lbs. chicken feet (approximately 680 grams)
  • 1 tablespoon apple cider vinegar
  • 7 cups of water
  • 4 cloves of garlic, minced
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 stalks of celery, chopped
  • 2 teaspoons of salt
  • ¼ teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • ½ teaspoon of dried oregano
  • 1 cup of dry egg noodles
  • 12 ounces of leftover cooked chicken, chopped or shredded
  • Fresh chopped parsley and lemon wedges for serving

Equipment Needed

  • A sharp knife or kitchen shears
  • A large slow cooker or crock pot
  • Mixing spoons

Preparing the Chicken Feet

Cleaning the Chicken Feet

Begin by ensuring the chicken feet are clean. Often, the yellow outer layer has been removed by the butcher. If not, peel it off yourself.

Use sharp kitchen shears to clip off the tips of the toes to remove any nails.

Trimming and Preparing

  • Once cleaned, rinse the chicken feet thoroughly under cold running water.
  • Pat them dry using paper towels to remove any excess moisture.

Cooking the Broth

Starting the Broth

  • Place the trimmed chicken feet into your slow cooker.
  • Pour in 7 cups of water, ensuring the chicken feet are fully submerged.
  • Add 1 tablespoon of apple cider vinegar to the water. This helps to draw out impurities and enhance the flavor.

Adding Aromatics and Seasonings

  • Add the minced garlic, chopped onion, chopped carrots, and chopped celery into the slow cooker.
  • Season with 2 teaspoons of salt, ¼ teaspoon of black pepper, 1 teaspoon of dried thyme, and ½ teaspoon of dried oregano.

Cooking Process

  • Cover the slow cooker and set it to low heat.
  • Allow the chicken feet soup to cook for a full 24 hours for maximum flavor extraction. The long, slow cooking process is crucial for developing a rich and gelatinous broth.

Finishing the Soup

Adding Noodles and Chicken

  • After 24 hours, remove the lid of the slow cooker.
  • Add 1 cup of dry egg noodles and let them cook for about 30 minutes, or until they are tender.
  • Incorporate 12 ounces of leftover cooked chicken, chopped or shredded, into the soup. This adds additional texture and flavor.

Tasting and Adjusting Seasoning

Taste the broth and adjust the seasoning if necessary. You may want to add more salt or pepper to taste.

Serving

  • Ladle the chicken feet soup into bowls.
  • Garnish with fresh chopped parsley and lemon wedges for a refreshing touch.
  • Serve hot, accompanied by steamed rice or your favorite side dish.

Tips and Variations

Freezing Chicken Feet

  • If you can’t find chicken feet in your local supermarket, visit a store specializing in East Asian foods.
  • Chicken feet freeze well, so you can buy in bulk and store them in the freezer for future use.

Removing Chicken Feet

  • If you prefer not to eat the chicken feet themselves, simply strain out the feet before serving the soup.
  • You will still have a delicious and collagen-rich broth.

Adding Other Ingredients

  • Feel free to customize your soup by adding other ingredients like tofu, mushrooms, or green vegetables.
  • For a heartier soup, you can also include potatoes or sweet potatoes.

Nutritional Benefits

Chicken feet soup is highly nutritious, primarily due to its high collagen content. Collagen is a vital protein for skin health, joint flexibility, and overall body function. Regular consumption of collagen-rich foods can help improve skin elasticity, reduce joint pain, and promote overall well-being.

Cultural Significance

In Chinese cuisine, chicken feet are considered a delicacy and are often served during special occasions or as a comfort food. They symbolize prosperity and good fortune, making them a popular choice for family gatherings and festive meals.

Conclusion

Cooking Chinese-style chicken feet soup may seem like a daunting task, but with the right ingredients and a slow cooker, it becomes a straightforward and rewarding process. The long cooking time allows all the flavors to meld together, creating a rich and gelatinous broth that is both nutritious and delicious. Whether you enjoy the chicken feet themselves or prefer to strain them out, this soup is sure to become a favorite in your kitchen. So, next time you’re looking for a comforting and nutritious meal, give Chinese-style chicken feet soup a try!
