How to Cook Chinese Yam

Unlike sweet potatoes, which are often mistakenly called yams in many parts of the world, true Chinese yams have a dark brown exterior and starchy white flesh. They are perfect for both savory and sweet preparations. Here’s a detailed guide on how to cook Chinese yams, highlighting various cooking methods to bring out their best flavor.

Preparation Before Cooking

Before diving into the cooking process, it’s crucial to prepare the yams properly.

Selecting the Right Yams: Choose small to medium-sized yams that have a smooth, firm exterior without any soft spots. The best time to buy yams is during the winter season as they are in peak supply.

Storing Yams: Store yams in a cool, dry place. They can be kept for up to a week. Avoid refrigerating yams as they tend to dry out.

Cleaning and Peeling: Thoroughly wash the yams under running water to remove any dirt. Peel the skin using a vegetable peeler or a sharp knife. The skin is tough and woody, so be careful while peeling.

Boiling Chinese Yams

Boiling is one of the simplest ways to cook Chinese yams.

Cutting the Yams: Cut the peeled yams into bite-sized cubes for even cooking.

Boiling Process: Fill a large pot with enough water to cover the yams. Add a pinch of salt for flavor. Bring the water to a boil. Add the yam cubes and cook them for 20 to 25 minutes, or until they are tender. You can test their doneness by inserting a fork or knife into the flesh; it should slide in easily.

Using Boiled Yams: Boiled yams can be mashed to serve as a side dish or used as an ingredient in quick breads and pies. For mashed yams, use a potato masher or a low-speed electric mixer to achieve a smooth consistency.

Baking Chinese Yams

Baking is another excellent method that brings out the natural sweetness of the yams.

Preparing the Yams: Wash the yams thoroughly and pat them dry. Pierce the yams with a fork a few times to allow steam to escape during baking.

Baking Process: Place the yams directly on the oven rack or on a baking sheet lined with parchment paper. Bake for 40 to 60 minutes, or until they are tender. You can check their doneness by inserting a fork or knife into the flesh.

Steaming Chinese Yams
