How to Cook Char Kuey Teow

Char Kuey Teow, also known as stir-fried rice noodles or flat rice noodles, is a beloved dish in many parts of Asia, particularly in Malaysia and Singapore. Its rich, savory flavor and the perfect balance of textures make it a favorite among food enthusiasts. Whether you’re a seasoned chef or a home cook, learning how to cook Char Kuey Teow can add a delightful dish to your culinary repertoire. Here’s a step-by-step guide to help you prepare this delicious meal.

Ingredients

To make authentic Char Kuey Teow, you’ll need the following ingredients:

Noodles: 200 grams of flat rice noodles (Kuey Teow)

Vegetables: 1 cup of bean sprouts, 1/2 cup of Chinese chives (or scallions), and any other vegetables you prefer, such as bell peppers or carrots

Protein: 7-8 shrimp (shelled and deveined), 4-8 slices of fish cake or chicken, and 2 eggs

Aromatics and Seasonings: 1 teaspoon of minced garlic, 1 tablespoon of lard or pork fat (plus crispy pork lard for added flavor), 1 Chinese sausage (sliced), 2-3 tablespoons of cockles or clams (optional), 1 tablespoon of chili paste (optional)

Sauces: 1 tablespoon of light soy sauce, 1/2 tablespoon of fish sauce, 1 tablespoon of sweet soy sauce, 1 teaspoon of dark soy sauce, 1 teaspoon of oyster sauce, and 3 tablespoons of water

Preparation

Before you start cooking, make sure you have all the ingredients ready and the noodles soaked and drained if necessary. Here’s how to prepare each component:

Noodles: Soak the flat rice noodles in warm water for about 10-15 minutes until they are pliable but not overly soft. Drain them well and set aside.

Vegetables: Wash and chop the vegetables. Cut the chives into 1-inch lengths.

Protein: Peel and devein the shrimp. Slice the fish cake or chicken into bite-sized pieces.

Aromatics: Peel and mince the garlic. Slice the Chinese sausage.

Sauces: In a small bowl, mix together all the sauces and water. Adjust the quantities to taste.

Cooking Steps

Now, let’s dive into the cooking process.

Step 1: Heat the Wok

Heat the Pan: Place a large wok or frying pan over medium-high heat.

Add Fat: Add 1 tablespoon of lard or pork fat to the wok. Let it melt and heat up.

Step 2: Sauté Aromatics and Proteins

Add Garlic: Once the fat is hot, add 1 teaspoon of minced garlic and stir-fry until fragrant (about 30 seconds).

Add Sausage: Add the sliced Chinese sausage and stir-fry for another minute until it starts to brown.

Add Shrimp and Fish Cake: Add the shrimp and fish cake slices. Stir-fry for 2-3 minutes until the shrimp turns pink and the fish cake is heated through.

Step 3: Stir-Fry the Noodles

Add Noodles: Add the drained rice noodles to the wok. Stir-fry quickly to coat the noodles with the fat and to prevent them from sticking together.

Add Sauce: Pour in about half of the sauce mixture (about 2-3 tablespoons). Stir-fry for another 2 minutes, allowing the noodles to absorb the sauce and develop a slight char.

Step 4: Add Vegetables and Eggs

Push Noodles Aside: Push the noodles to one side of the wok.

Add Eggs: Crack the eggs into the empty space and scramble them with a spatula.

Mix Everything: Once the eggs are partially set, mix them into the noodles.

Add Vegetables: Add the bean sprouts and chives. Stir-fry for another minute until the vegetables are wilted but still crisp.

Step 5: Adjust Seasoning and Serve

Add More Sauce: Taste the noodles and add more sauce if needed. Stir well to ensure all the ingredients are evenly coated.

Add Chili Paste: If you like your Char Kuey Teow spicy, stir in the chili paste at this stage.

Serve: Serve the Char Kuey Teow hot, garnished with additional chopped chives or green onions if desired.

Wok Hei: The key to delicious Char Kuey Teow is achieving that smoky, charred flavor known as “wok hei.” This requires a hot wok and stirring the noodles constantly to prevent sticking and ensure even cooking.

Ingredients Quality: Use fresh, high-quality ingredients for the best flavor. Fresh shrimp, tender fish cake, and crisp vegetables will make a noticeable difference.

Sauce Balance: The sauce mixture is crucial. Adjust the quantities of soy sauce, fish sauce, and sweet soy sauce to taste, but remember that a balance of savory, sweet, and umami flavors is key.

Cooking Temperature: Maintain a high cooking temperature to create the desired char on the noodles and cook the ingredients quickly.
