Red Dates, Goji Berries, and Chinese Wolfberries: Rinse them briefly in cold water to remove any dirt or dust.

Add fresh water and the rest of the ingredients: Refill the pot with 8–10 cups of fresh water. Add the chicken back into the pot along with the Wai San, red dates, goji berries, wolfberries, ginger, and any other optional ingredients like lotus seeds or dried longan.

Simmer the soup: Bring the soup to a boil again, then lower the heat to a simmer. Cover the pot with a lid and let it cook for about 1.5 to 2 hours. If you’re using pork bones instead of chicken, you may need to simmer the soup for 2-3 hours to fully extract the flavors.

Season the soup: About 30 minutes before finishing, taste the soup and add salt to your liking. You can also add more goji berries or red dates if you prefer a sweeter taste.

Using a Slow Cooker:
