What Are Chinese Crispy Noodles?

Chinese crispy noodles are noodles that are deep-fried until they turn crunchy. They are usually made from egg noodles or thin wheat noodles. Stir gently to prevent sticking. The noodles should be cooked but still firm. This is called “al dente.” Do not overcook them.
