Christmas pudding is a traditional British dessert served during the festive season. It is rich, dark, and full of dried fruits, spices, and warming flavors. It is often prepared weeks ahead of Christmas Day to let the flavors develop. Preparing Christmas pudding at home might seem difficult, but it is easier than it looks. This article gives a step-by-step guide to help you make a perfect Christmas pudding that your family and guests will love.

What Is Christmas Pudding?

Christmas pudding is also known as plum pudding. Despite the name, it usually contains no plums. The word “plum” is an old word for raisins. This dessert is a steamed or boiled pudding made with dried fruits, breadcrumbs, suet, flour, sugar, eggs, and various spices. It is often flavored with alcohol like brandy or rum. Some versions also contain nuts or grated apple. The pudding is steamed for several hours and stored for weeks to mature. On Christmas Day, it is reheated, doused in brandy, and set alight before being served.

  • 225g raisins
  • 225g sultanas
  • 225g currants
  • 100g mixed peel
  • 1 medium apple (peeled and grated)
  • 1 small carrot (peeled and grated)
  • 100g chopped dried apricots or dates
  • 50g chopped almonds or walnuts (optional)
  • 125g suet (vegetarian or beef)
  • 125g fresh white breadcrumbs
  • 125g brown sugar
  • 75g plain flour
  • 1 tsp mixed spice
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 orange (zest and juice)
  • 1 lemon (zest and juice)
  • 2 large eggs
  • 150ml brandy, rum, or stout
  • Butter for greasing

Step-by-Step Guide to Preparing Christmas Pudding

Step 1: Mix the Dry Ingredients

Start by combining all the dry ingredients in a large mixing bowl. This includes the dried fruits, grated apple and carrot, chopped nuts, suet, breadcrumbs, sugar, flour, and spices. Mix everything well so the fruits and spices are evenly spread.

Step 2: Add Zest and Juice

Grate the zest of the orange and lemon and squeeze out their juices. Add both the zest and juice to the bowl. The citrus adds freshness and balances the sweetness of the fruits. Stir again to combine.

Step 3: Stir in the Eggs and Alcohol

In a small bowl, lightly beat the eggs. Add the beaten eggs to the mixture. Then pour in your chosen alcohol – brandy, dark rum, or stout. Stir everything until well combined. The mixture should be moist but not too wet. If it seems dry, add a little more alcohol or fruit juice.

Step 4: Make a Wish While Stirring

It is a tradition to let each member of the household take a turn stirring the pudding. They should stir it from east to west and make a wish. This step adds a bit of magic and joy to the preparation.

Step 5: Let It Rest Overnight

Cover the bowl with a clean tea towel or cling film and leave it overnight. This resting time lets the flavors develop. The fruits absorb the moisture and become plump and juicy.

Step 6: Prepare the Pudding Basin

Choose a 1.5-liter pudding basin. Grease the inside with butter. Cut a small circle of baking paper to fit the base. This helps to prevent sticking. Spoon the pudding mixture into the basin. Press down lightly to remove air pockets. Leave about 1 inch of space at the top for the pudding to expand.

Step 7: Cover the Pudding

Place a sheet of baking paper over the top of the basin. Then cover with a layer of foil. Fold a pleat in both to allow for expansion. Tie the foil tightly with kitchen string around the rim of the basin. Make a handle with the string to lift the pudding easily.

Step 8: Steam the Pudding

Place a trivet or upturned saucer in the bottom of a large pot. Put the pudding basin on top. Pour in boiling water to halfway up the side of the basin. Cover with a lid and steam for about 6 hours. Check the water level often and top up with boiling water as needed.

Step 9: Cool and Store

After steaming, remove the pudding and let it cool completely. Replace the foil and paper with fresh ones if needed. Store the pudding in a cool, dark place. It will keep for weeks, even months. Over time, the flavors will deepen and improve.

Step 10: Reheat on Christmas Day

To reheat the pudding, steam it again for 2–3 hours on Christmas Day. Follow the same method as before. You can also microwave it in short bursts, but steaming gives a better result.

Step 11: Serve with Brandy and Flames

When ready to serve, warm a few tablespoons of brandy in a small saucepan. Pour the warm brandy over the pudding and light it with a match. Let the blue flames dance before cutting the pudding. Serve with custard, cream, or brandy butter.

Tips for Best Results

Use good-quality dried fruits. Organic or plump fruits give a richer taste.

Alcohol helps preserve the pudding. You can use fruit juice instead but reduce the storage time.

Make it ahead of time. Traditional puddings are made at least a month in advance.

Label and date the pudding. This helps keep track of how long it’s been stored.

Use a tight-fitting lid when steaming. This prevents too much steam from escaping.

Variations and Substitutes

If you want to make your Christmas pudding unique, try some of these variations:

Vegetarian: Use vegetarian suet or butter.

Gluten-Free: Use gluten-free breadcrumbs and flour.

No Alcohol: Use orange juice or apple cider instead of brandy.

Different Fruits: Add cranberries, cherries, or chopped figs.

Nut-Free: Skip the nuts if there are allergies.
