Dessert Recipes Using Greek Yogurt

1. Greek Yogurt Berry Parfait

  • 1 cup Greek yogurt
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon honey or maple syrup (optional)
  • Granola or crushed nuts for topping
  • Fresh mint leaves for garnish (optional)

  1. In a small bowl, mix the Greek yogurt with honey or maple syrup, if using, until smooth.
  2. Rinse the berries and pat them dry with a paper towel. Slice any larger berries, if desired.
  3. Layer the Greek yogurt mixture with mixed berries in serving glasses or bowls, alternating between yogurt and berries.
  4. Sprinkle granola or crushed nuts over each layer for added texture and crunch.
  5. Repeat the layers until the glasses or bowls are filled, finishing with a layer of berries on top.
  6. Garnish with fresh mint leaves, if desired, for a pop of color and flavor.

2. Lemon Greek Yogurt Pound Cake

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 cup plain Greek yogurt
  • Lemon glaze (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract and lemon zest.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt, and mix until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is still warm, prepare the lemon glaze by mixing together powdered sugar and fresh lemon juice until smooth. Drizzle the glaze over the cooled cake, if desired, for extra sweetness and flavor.

3. Greek Yogurt Cheesecake Bars

Ingredients:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup plain Greek yogurt
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • Berry compote or fruit preserves for topping (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
  3. In a large bowl, beat the cream cheese until smooth and creamy. Add the Greek yogurt, sugar, eggs, vanilla extract, and lemon zest, and beat until well combined and creamy.
  4. Pour the cheesecake filling over the graham cracker crust and smooth the top with a spatula.
  5. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let cool completely at room temperature. Refrigerate for at least 2 hours, or until chilled and firm.
