New Japanese-Inspired Cocktails Shine at Moga

SINGAPORE – Moga, the izakaya-inspired cocktail bar, has unveiled an exciting new menu featuring a fusion of Japanese flavors and inventive cocktails. Behind the bar, seasoned bartender Gavin Teverasan, previously of 28 HongKong Street, Nutmeg & Clove, and Barbary Coast, has teamed up with chef Leon Quek, formerly of Cut by Wolfgang Puck, to offer a fresh take on the bar’s drink and food offerings.

With over a decade of experience, both Teverasan and Quek have developed the revamped menu, aptly titled Breaking The Norm, which introduces a series of eight effervescent izakaya-inspired cocktails. These drinks pay homage to Japan’s rich culinary heritage, with a focus on highball-style cocktails infused with bubbles and bold flavors.

One standout on the menu is the Salted Yuzu Highball ($25), a refreshing combination of Johnnie Walker Gold-infused genmaicha, Angostura Bitters, yuzu saline, shiu koji, and buckwheat tea syrup. Its earthy depth, combined with a zesty kick, makes it an easy favorite.

The new cocktail menu also features twists on traditional favorites. The Dirty Sake-tini ($25), for example, adds sake and shochu to the classic, delivering the signature briny punch, while introducing mellow rice notes for a smoother finish. For those with a sweet tooth, The Frozen Drink ($25) offers a playful take on matcha anmitsu, blending taro and Kujira whisky into a creamy, dessert-like concoction that’s sure to intrigue.

Moga’s cocktail menu is complemented by a selection of delicious bar bites. Highlights include Hokkaido milk buns with a seasonal dip ($10), truffled edamame beans with shio kombu and shichimi ($12), and crispy squid with fish sauce, green chili, and yuzu ($20). The must-try dish is the smashed batata ($14), a plate of perfectly fried potatoes paired with smoky pancetta—though it’s hard not to wish for a larger portion.

Chef Quek’s expertise in smoking and robata techniques is reflected throughout the food menu, which also features raw options, sushi rolls, and a variety of sando sandwiches. While the menu doesn’t push the boundaries of culinary innovation, it succeeds in delivering a fun, flavorful experience.

Moga is located on Level 1 of Pullman Singapore Hill Street, just a short walk from City Hall MRT. The bar is open daily, offering cocktails and bites from noon to 3 pm (Mondays to Saturdays) and again from 6 pm to midnight (Mondays to Thursdays), and until 1 am on Fridays and Saturdays.
