What Are Chinese Rice Noodles?

Chinese rice noodles are made from rice flour, water, and sometimes a little salt. They are thin, translucent, and have a soft texture when cooked. Rice noodles come in various shapes and sizes, ranging from wide to thin strips. They are commonly used in Chinese cuisine for dishes like chow fun, pho, pad thai, and spring rolls.

Ingredients for Chinese Rice Noodles

To make Chinese rice noodles, you will need the following ingredients:

  • 2 cups of rice flour (make sure it is the type specifically for making rice noodles)
  • 1/2 cup of tapioca flour or cornstarch (for added elasticity)
  • 1 1/2 cups of water
  • 1/4 teaspoon of salt
  • 1 tablespoon of vegetable oil (optional)

These ingredients are easy to find in most supermarkets or Asian grocery stores.

Equipment Needed

Before you start, gather the following equipment:

  • A large mixing bowl
  • A whisk
  • A non-stick pan or wok
  • A steamer (you can use a bamboo steamer or any other type of steamer)
  • A spatula or spoon
  • A large plate or tray for the noodles to set
  • A rolling pin or noodle press (optional)

Step-by-Step Guide to Making Rice Noodles

Step 1: Prepare the Dough

The first step in making Chinese rice noodles is preparing the dough.

  1. In a large mixing bowl, combine 2 cups of rice flour, 1/2 cup of tapioca flour (or cornstarch), and 1/4 teaspoon of salt.
  2. Slowly add water to the flour mixture while stirring constantly. This will help prevent lumps.
  3. Mix until you get a smooth, thick batter. The consistency should be like pancake batter, not too thick but not runny either.
  4. If desired, add 1 tablespoon of vegetable oil to the mixture to give the noodles a smoother texture. Stir well.

Step 2: Prepare the Steamer

  1. Fill a large pot with water and bring it to a boil. Place a steamer tray over the pot.
  2. You can line the steamer with parchment paper to prevent the noodles from sticking. Make sure the steamer tray is large enough to hold a flat dish or plate.

Step 3: Steam the Noodles

  1. Pour the rice noodle batter onto a flat, shallow plate. The plate should be able to fit inside the steamer. You can spread the batter evenly with a spatula to make it a thin layer.
  2. Carefully place the plate into the steamer. Cover the steamer with a lid.
  3. Steam the batter for about 10 to 15 minutes, or until the batter sets into a solid sheet. The noodles should be firm but still tender.
  4. Once cooked, remove the plate from the steamer and let it cool for a few minutes. Repeat this process with the remaining batter, adding more water to the pot as needed.

Step 4: Cut the Noodles

  1. Once the rice noodle sheets have cooled down, use a sharp knife to cut them into strips. You can make the noodles as thin or as wide as you like. Traditional Chinese rice noodles are usually thin.
  2. If you have a noodle press, you can use it to roll out the dough and cut it into uniform strips.

Step 5: Use or Store the Noodles

Your homemade Chinese rice noodles are now ready to use. You can stir-fry them, add them to soups, or even make a delicious noodle salad.

If you are not using them immediately, store the noodles in an airtight container in the fridge. They will stay fresh for up to 2-3 days.

Tips for Making Perfect Chinese Rice Noodles

Rice Flour: Be sure to use rice flour that is labeled for making noodles. This type of flour is finer and results in a smoother texture.

Steaming Time: Keep an eye on the noodles while they steam. Over-steaming can make the noodles too firm, while under-steaming can leave them too soft.

Consistency of the Batter: If the batter is too runny, your noodles might fall apart. If it’s too thick, it will be difficult to steam them properly. Adjust the water amount as needed to get the right consistency.

Adding Flavor: You can infuse the noodles with flavor by adding ingredients like garlic, ginger, or a little soy sauce to the batter.

How to Cook with Chinese Rice Noodles

Once you’ve made your rice noodles, you can use them in various delicious dishes.

Stir-Fried Rice Noodles

  1. Heat some oil in a wok or large skillet.
  2. Add your favorite vegetables like carrots, bell peppers, and mushrooms. Stir-fry until tender.
  3. Add your homemade rice noodles and toss them with soy sauce, sesame oil, and any additional seasonings like garlic or chili.
  4. Stir-fry for a few minutes until everything is well-mixed and heated through.
  5. Serve hot with a sprinkle of fresh herbs like cilantro or green onions.

Rice Noodle Soup

Rice noodles are perfect in a warm bowl of soup. Try adding them to a simple broth with vegetables, tofu, or meat.

  1. Prepare the broth by boiling some vegetable stock or chicken stock in a pot.
  2. Add in the rice noodles and cook for about 2-3 minutes until they are heated through.
  3. Add your favorite vegetables, herbs, and protein, such as chicken, beef, or shrimp.
  4. Season with soy sauce, ginger, garlic, and a pinch of salt.
  5. Serve hot, garnished with fresh herbs.

Rice Noodle Salad

For a refreshing dish, make a rice noodle salad. It’s easy and light, perfect for a quick meal or side dish.

  1. Boil the rice noodles in water for 3-4 minutes until soft. Drain and rinse with cold water.
  2. Toss the noodles with shredded carrots, cucumber, cilantro, and crushed peanuts.
  3. Dress with a mixture of soy sauce, lime juice, sesame oil, and a little sugar.
  4. Add chili flakes for a spicy kick.
  5. Serve chilled.

Storing Leftover Rice Noodles

If you have leftover rice noodles, here’s how to store them:

  1. Let the noodles cool to room temperature.
  2. Store them in an airtight container or a resealable bag.
  3. Keep the noodles in the fridge for up to 3 days.
  4. When ready to use, you can stir-fry them or add them directly to soups. If they seem a little dry, simply add a little water or broth to rehydrate them.

Common Mistakes to Avoid When Making Rice Noodles

Using the wrong type of rice flour: Regular rice flour will not give you the desired texture for rice noodles. Always use rice flour meant for noodle-making.

Incorrect batter consistency: If the batter is too thick or too runny, it will affect the texture of the noodles. Adjust the water as needed to get a smooth, pourable batter.

Overcooking the noodles: If you leave the noodles in the steamer for too long, they can become tough. Keep an eye on them as they steam.

Conclusion

Making Chinese rice noodles from scratch is a rewarding experience that lets you enjoy fresh, homemade noodles. With just a few simple ingredients and a little patience, you can create delicious noodles perfect for stir-fries, soups, and salads. Follow the steps, tips, and suggestions in this guide to make the best rice noodles for your favorite dishes. Enjoy your cooking journey!
