How to Steam Frozen Dim Sum: A Step-by-Step Guide

Step 1: Prepare Your Steamer

The first step in steaming frozen dim sum is to prepare your steamer. If you’re using a bamboo steamer, you need to line the bottom with parchment paper or cabbage leaves. This helps prevent the dim sum from sticking to the basket. If you’re using a metal steamer, a steaming rack will do the job. The idea is to create a surface where the dim sum can sit comfortably without touching the water.

Step 2: Add Water to the Pot or Wok

Next, fill your pot or wok with water. The water level should be just below the steamer basket or rack, so it doesn’t touch the dim sum. When the water boils, it will create steam, which is what will cook the dim sum. Make sure the pot is large enough to fit your steamer comfortably and that the water level is high enough to produce consistent steam throughout the cooking process.

Step 3: Bring the Water to a Boil

Place the pot or wok over medium-high heat and bring the water to a boil. Once the water is boiling, reduce the heat slightly to maintain a gentle simmer. You want the water to be steaming but not boiling too aggressively, as this could affect the texture of the dim sum.

Step 4: Arrange the Frozen Dim Sum in the Steamer

While the water is heating up, take your frozen dim sum and arrange it in the steamer basket. If you’re working with dumplings, buns, or similar items, make sure they are spaced out to allow room for steam to circulate around them. This ensures even cooking. Don’t overcrowd the basket. If you need to steam in batches, it’s better to do so than to stack the dim sum too tightly.

Step 5: Steam the Dim Sum

Once the water is boiling and your dim sum is arranged in the steamer, carefully place the steamer basket into the pot. Make sure the lid of the steamer is tightly secured to trap the steam. Depending on the type and size of the dim sum, the steaming time can vary.

Dumplings: Usually take about 8-10 minutes.

Buns: Typically need around 12-15 minutes.

Spring rolls: These may take 8-10 minutes as well.

You don’t need to defrost the dim sum before steaming it. Steaming from frozen helps preserve the texture and ensures the filling stays moist. Keep in mind that larger or thicker items, like buns, might take a bit longer to cook.

Step 6: Check for Doneness

After the recommended steaming time, carefully open the lid of the steamer (be cautious of the hot steam). Check the dim sum to ensure it is fully cooked. For dumplings, the skin should be soft and tender. For buns, the dough should be fully cooked and fluffy, with the filling hot. You can also use tongs to remove one piece and cut it open to check if the inside is hot and properly cooked.

If the dim sum isn’t fully cooked, cover the steamer again and steam for an additional few minutes.

Step 7: Serve and Enjoy

Once the dim sum is ready, carefully remove the steamer basket from the pot or wok using tongs. Place the dim sum on a serving plate, making sure not to burn yourself. You can serve dim sum with soy sauce, chili sauce, or vinegar for dipping, or simply enjoy them as they are.

Tips for Steaming Frozen Dim Sum

Don’t overfill the steamer: Overcrowding the steamer can lead to uneven cooking. Make sure each piece of dim sum has enough space to steam properly.

Use high-quality frozen dim sum: The better the quality of the frozen dim sum, the better the final result will be. Look for brands that are known for their authentic and high-quality products.

Monitor the water level: If you’re steaming for an extended period, you may need to add more water to the pot to keep the steam consistent.

Double-check the temperature: If you’re unsure about the cooking time, use a thermometer to check that the dim sum is at least 165°F (74°C) inside to ensure it’s fully cooked.
