The gentle steam-cooking method ensures that the fish remains tender, succulent, and full of nutrients.

  • Steamer or wok with a steaming rack

Materials

  • 1 whole fresh fish such as sea bass, red snapper, or tilapia, scaled and gutted, with a few diagonal cuts on both sides.
  • 3-4 slices of fresh ginger julienned.
  • 3-4 cloves of garlic minced.
  • 2-3 stalks of green onions julienned.
  • 2 tablespoons of light soy sauce.
  • 1 tablespoon of oyster sauce.
  • 1 tablespoon of Shaoxing wine Chinese cooking wine or dry sherry.
  • 1 teaspoon of sesame oil.
  • 1 teaspoon of sugar.
  • 1/2 teaspoon of white pepper powder.
  • Fresh cilantro leaves for garnish.
  • 1-2 red chilies thinly sliced (optional, for a spicy kick).

Instructions

Preparation:

  • Clean the Fish: Rinse the fish thoroughly under cold water. Pat it dry with paper towels. Make three to four diagonal cuts on both sides of the fish. This allows the flavors to penetrate and the fish to cook evenly.
  • Marinate the Fish: Place the fish on a plate that fits inside your steamer. Sprinkle a pinch of salt on both sides of the fish. Set aside for about 10 minutes. This step helps to remove any fishy odor.
  • Prepare the Aromatics: While the fish is resting, prepare the julienned ginger, minced garlic, and julienned green onions. These aromatics will infuse the fish with incredible flavors during steaming.
  • Create the Sauce: In a small bowl, mix the light soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar, and white pepper powder. Stir well until the sugar is dissolved. This sauce will be poured over the fish after steaming.

Steaming Process:

  • Set Up the Steamer: Fill a wok or steamer with water, making sure the water level is below the steaming rack. Place the steaming rack inside the wok or steamer. Cover and bring the water to a gentle boil over medium heat.
  • Steam the Fish: Carefully place the plate with the marinated fish onto the steaming rack. Cover and steam the fish for about 10-15 minutes, depending on the size and thickness of the fish. The fish is ready when the flesh turns opaque and easily flakes with a fork.
  • Garnish: While the fish is steaming, prepare the garnishes. Chop some fresh cilantro leaves and thinly slice red chilies, if using.

Finishing Touches:

  • Final Seasoning: Once the fish is fully cooked, remove it from the steamer and carefully drain any excess liquid that may have accumulated on the plate. Scatter the julienned ginger, minced garlic, and julienned green onions over the fish.
  • Sauce it Up: Gently reheat the sauce you prepared earlier. Once warmed, pour the sauce evenly over the steamed fish. The hot sauce will help to slightly cook the aromatics and infuse the fish with its delightful flavors.
  • Garnish and Serve: Sprinkle the chopped cilantro leaves and sliced red chilies over the fish. These garnishes add a burst of color, flavor, and aroma to the dish. Your Chinese-style steamed fish is now ready to be served!
