  • 2 tablespoons all-purpose flour (optional, for a firmer texture)

Topping (Optional):

  • Sour cream or whipped cream
  • Fresh fruit, berries, or chocolate syrup for garnish

  • 9-inch springform pan
  • Electric mixer or stand mixer
  • Mixing bowls
  • Spatula
  • Aluminum foil or parchment paper
  • Oven
  • Refrigerator

Now, let’s break down the process into manageable steps:

Preheat the Oven

Preheat your oven to 325°F (163°C). This temperature is crucial for ensuring the cheesecake cooks evenly without overbrowning the top.

Prepare the Crust

Combine Ingredients: In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined. The mixture should resemble wet sand.

Press into Pan: Grease the bottom and sides of a 9-inch springform pan. Place the crumb mixture into the pan and press it firmly and evenly into the bottom. Use the bottom of a measuring cup or a flat-bottomed glass to press the crust down tightly. This will prevent the crust from becoming soggy during baking.

Bake the Crust: Bake the crust for about 10 minutes, or until it’s lightly golden. Remove from the oven and let it cool slightly while you prepare the filling.

Prepare the Filling

Beat the Cream Cheese: In a large mixing bowl, use an electric mixer to beat the softened Philadelphia Cream Cheese until it’s smooth and creamy. This should take about 2-3 minutes on medium speed.

Add Sugar: Gradually add the granulated sugar to the cream cheese, beating on medium speed until well combined. Scrape down the sides of the bowl as needed to ensure everything is evenly mixed.

Add Eggs and Vanilla: One by one, add the eggs to the cream cheese mixture, beating on low speed after each addition just until combined. Avoid over-mixing, which can cause the cheesecake to crack. Add the vanilla extract and lemon juice, and mix until incorporated.

Cool and Chill

Chill: Remove the cheesecake from the oven and the water bath. Run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the springform pan. Place the cheesecake on a wire rack to cool completely, then refrigerate it for at least 4 hours or overnight. This allows the cheesecake to set fully and develop its flavor.
