How to Make Chinese Rice Noodles at Home

What Are Chinese Rice Noodles?

Chinese rice noodles are thin, translucent noodles made from rice flour and water. They are commonly used in Chinese, Thai, and Vietnamese cuisines. These noodles are naturally gluten-free, making them an excellent option for people with gluten sensitivities. Rice noodles can be found in various shapes, including flat, thin, and wide, depending on the dish you’re preparing.

To make Chinese rice noodles at home, you’ll need the following basic ingredients:

Rice Flour: This is the primary ingredient that gives the noodles their soft and chewy texture.

Step 3: Steam the Rice Noodles

To cook the rice noodle batter, you’ll need a steaming setup. If you don’t have a traditional steamer, you can use a large pot with a steam rack or a metal colander that fits inside the pot.

Grease a flat tray or a shallow dish with a little oil to prevent the noodles from sticking. Pour a thin layer of the rice flour mixture onto the greased tray. The layer should be thin enough to cook quickly but not so thin that it tears easily.

Place the tray in the steamer and cover it with a lid. Steam the mixture for about 5-8 minutes, or until the noodles are cooked through and have a firm, yet flexible texture.

Once the first batch is done, carefully remove the tray from the steamer and set it aside to cool slightly. Repeat this process with the remaining batter, adding more layers of rice flour mixture to the tray and steaming each layer until fully cooked.

Step 4: Cut the Noodles

Once the rice noodle sheets have cooled slightly, it’s time to cut them into noodles. You can cut them into any shape you prefer, depending on your recipe. For stir-fries and soups, it’s common to cut the noodles into thin strips. You can use a sharp knife to slice the cooled noodle sheets into even strips of your desired width.

If you want wider noodles, you can cut the sheets into broader strips. Make sure the noodles are of uniform thickness so they cook evenly.

Step 5: Cook the Rice Noodles

Once your noodles are cut, they are ready to use in your favorite recipe. You can stir-fry, toss them in soups, or use them in salads.

To cook the noodles, bring a pot of water to a boil. Gently add the rice noodles to the water and cook for about 2-3 minutes. Unlike wheat noodles, rice noodles cook quickly, so keep an eye on them to avoid overcooking.

Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process and remove any excess starch. This will help the noodles stay separate and prevent them from sticking together.
