Straining: Line a colander with cheesecloth or a fine-mesh strainer and place it over a large bowl. Pour the curds and whey into the colander. Gently press down on the curds to release more whey. You can also use a spoon to press the curds against the cheesecloth to help drain the whey.

Finishing: Let the curds drain for about 1-2 hours, or until they reach your desired consistency. The longer you let them drain, the firmer the Mascarpone will be. Once done, you can transfer the Mascarpone to an airtight container and store it in the refrigerator for up to a week.
