Costco has introduced a new snack that’s putting a twist on a classic summer favorite: the Strawberry Shortcake ice cream bar.
Now available in bite-sized form, the new Strawberry Shortcake Bites have started appearing in Costco warehouses, according to a Reddit post shared earlier this week. The snack, inspired by the iconic frozen treat, features shortbread cookies filled with sweet strawberry crème.
While the original bar is a frozen dessert made with strawberry and vanilla ice cream coated in cake crumbles, the new bites are sold at room temperature. That hasn’t stopped shoppers from getting creative.
“I wonder if these would be amazing on the Kirkland vanilla ice cream as a topper?” one Reddit user asked. Another suggested, “Crush them up and sprinkle them on or mix them in… I’m going to do this.”
Whether eaten on their own or used as a topping, the new bites are already gaining attention for their sweet and nostalgic flavor. Some fans even joked about their impact on summer fitness goals. “I could have gone my whole life without knowing these existed. So much for my summer beach body!” one user wrote. Another added, “Glad I didn’t pick it up because it will definitely sabotage my diet.”
For those who want more variety, the snack also comes in other flavors. One Redditor mentioned, “The Thin Mint ones were unreal. Can’t wait to try these.”
With strong early reactions online, Costco’s Strawberry Shortcake Bites are shaping up to be one of the summer’s most tempting treats.
