  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter (melted)

  • 4 packages (8 oz each) cream cheese, softened
  • 1 ¼ cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour (optional)
  • 1 tablespoon lemon juice (optional)

Directions

Preheat the Oven: Start by preheating your oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and grease the sides with butter.

Make the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and cinnamon (if using). Add the melted butter and stir until the mixture resembles wet sand. Press the mixture evenly into the bottom of the prepared pan. Use the back of a spoon to press down firmly. Bake the crust in the preheated oven for 10 minutes, then set it aside to cool.

Prepare the Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sugar and vanilla extract, and continue to beat until fully combined.
